Beef Flat Noodle Recipe
Beef Flat Noodle Recipe
Serves 4
Ingredients:
-500 gm flat rice noodles
-150 gm beef
-1/2 onion, shredded
-120 gm bean sprouts, trimmed
-shredded ginger, to taste
-1 stalk spring onion, chopped
Marinade:
-2 1/2 tsp light soy sauce
-1/4 tsp dark soy sauce
-1 tsp corn flour
-3/4 tsp sugar
-2 tsp water
-sesame oil, to taste
Seasonings:
-2 Tbsp light soy sauce
-1 Tbsp dark soy sauce, or to taste
- Salt, to taste
-1 tsp Sugar
Directions:
1. Rinse beef and wrap dry with kitchen papers. Thinly slide across the grain. Mix with marinade for 15 minutes. Set aside.
2. Heat oil in a frying pan over medium-high heat. Place beef on a single layer and fry both sides, until they are 70% cooked. Set aside.
3. Heat more oil in pan. Add onion and stir fry until translucent and fragrant. Be sure not to burn them. Add ginger and bean sprouts. When the bean sprouts are softened, push the onion and bean sprouts to the sides of pan if it’s big enough, or dish them up if your pan is too small. Increase heat to high.
4. Toss in flat noodles and stir fry until it’s really heated up. Add seasoning. Remember to taste by yourself. Add more light soy sauce if needed, bit by bit at a time. If you find the colour of flat noodles is not dark enough, you can add more dark soy sauce if you like. Mind you that if too much dark soy sauce is added, your noodles will taste bitter.
5. Toss back the beef, onion and bean sprouts, combine all ingredients. Add spring onion and mix. Serve hot.

E Fu Noodles Recipe
E Fu Noodles Recipe
Serves 4
Ingredients:
-1/2 kg fresh e-fu noodles
-3 tablespoons vegetable oil
-1 tablespoon soya sauce
-salt
-3 cloves garlic, minced
-3 shallots, chopped
-10 dried black mushrooms, soaked and sliced, reserving some of the soaking water
-3 tablespoons oyster sauce
-5 stalks koo chye, chopped
-pepper
Directions:
1. Blanch the noodles and drain. In a large bowl, combine the noodles with 1 tablespoon oil, soya sauce and a pinch of salt and mix well.
2. In a large wok, heat the remaining oil until it shimmers. Add the garlic and shallots and stir and cook until fragrant.
3. Add the mushrooms and a little of the mushroom water. Stir-fry until the mushrooms are soft.
4. Add the oyster sauce, koo chye, and salt and pepper to taste. Stir until well mixed and heated through. Serve hot.

House Special Chow Mein Recipe
House Special Chow Mein Recipe
Serves 4
Ingredients
-1/2 pound beef sliced
-3/4 pound (approx.) fresh chow mein egg noodles
-6 to 8 stalks of young/small Chinese broccoli (“gai lan” or “kai lan”)
-1 small onion, cut into large pieces
-8 thin slices of carrot (optional, this is for the colour)
-3 cloves garlic, minced finely
-1 slice ginger, cut into thin strips
-3/4 cup beef broth or chicken broth
-2 tbsp oyster sauce
-1 tbsp soy sauce
-1 tsp shaoxing rice wine
-1 tsp sesame oil
-ground white pepper (to taste)
-1/2 tbsp + 1 tbsp corn starch
-vegetable oil
Directions:
1. Marinate the beef with the garlic, soy sauce and 1/2 tbsp corn starch for at least 1 hour. Meanwhile, in a small bowl, mix together the broth, oyster sauce, rice wine, sesame oil, white pepper, and cornstarch. Set aside.
2. Bring a large pot of water to boil over high heat. Meanwhile, lightly grease a pie dish (or a glass round baking dish) with vegetable oil and set aside. When the water comes to a rolling boil, add the noodles. Cover the pot with a lid until the water reaches a rolling boil again. Then loosen the noodles with long chop sticks and cook the noodles as per the directions on the package
3.Drain very well. Then press the noodles into the prepared pie dish with a weighted plate. Set aside. Note: This step shapes and compacts the noodles which will make them crispier and easier to flip and plate.
4. Heat a wok over high heat. When the wok is very hot, add 2 tbsp vegetable oil and swirl to coat the bottom half of the wok with oil. Add the ginger and Chinese broccoli. Stir constantly until the vegetables are tender but still crisp, about 2 to 3 minutes (the cook time will vary depending on the size of your Chinese broccoli). During that time, you can add water to the wok to prevent burning. This will help cook the vegetables faster (by steam) and maintain moisture.
5. Add 1/8 cup of cold water at a time, adding more only once the wok completely dries up. Just a warning that this will create some smoke. When the vegetables are done, dish out and set aside. Wipe clean the wok and return it to high heat. When the wok is very hot, add 3/4 cup vegetable oil. When the oil is very hot, carefully add the noodles while trying to maintain their shape. Leave the noodles undisturbed until the bottom side is crispy, about 2 minutes.
6. Then turn the noodles over and fry the other side until crispy, about 2 minutes. Plate and set aside. Alternatively, you could pan fry the noodles in a large skillet.Clean the wok, wipe it dry, and return it to high heat. When the wok is very hot, add 2 tbsp vegetable oil and swirl to coat the bottom half of the wok with oil.
7. Add the onions and stir constantly until they are translucent but still crispy, about 1 minute. Add the carrots and the beef and stir constantly until the meat is almost cooked through, about 45 seconds. Then add the cooked Chinese broccoli and the sauce. Mix everything together and allow the sauce to reach a boil. The sauce will thicken. Stir until you achieve the desired consistency and pour everything over the noodles. Serve immediately.

Ingredients
Sauce
-1 tsp oyster sauce
-1/4 tsp chicken stock
-1 tsp dark soy sauce
-1/4 tsp sugar
-1/4 tsp salt
-1/4 tsp thick chile sauce (to taste)
Noodles
-2 oz julienne pork tenderloin
-1 Tbsp vegetable oil
-16 oz Shanghai noodles, cooked and drained
-1 Tbsp sliced green cabbage
-1 tsp julienne carrot
-2 tsp julienne white onion
-1 green onion, minced
Directions:
1. Fill two thirds of a medium saucepan with water. Bring water to boil, add pork and cook for 10 mins, drain. In a wok or large frying pan, heat oil over medium-high heat. Add vegetables and stir-fry for 2 mins.
2. Toss cooked pork and noodles with vegetables, cook for 2 mins. Add sauce to coat noodles and veggies. Cook for 2 more min.

Salt and Pepper Tofu Recipe
Salt and Pepper Tofu Recipe

Ingredients
-Vegetable oil, for deep-frying
-1 cup cornflour
-Tofu, cut into 4 pieces (1 x 10 x 2cm)
-4-5 cloves garlic, finely sliced
-1 large chilli, deseeded and chopped
-2 shallots, chopped
-1/2 tablespoon salt and pepper mixture*
Directions:
1. Heat the oil in a deep fryer. Put cornflour in a bowl and add the tofu. Gently coat the tofu and allow to rest for a minute. Deep-fry until golden brown.
2. Lightly oil a wok, turn on high heat, throw in the garlic for a good stir, then the chilli and shallots. Finally add the tofu, sprinkle with some of the salt and pepper mixture and give it all a good toss.
3.Serve with the remaining salt and pepper mixture on the side.* Make salt and pepper mixture by combining 4 tbsp salt, 2 tbsp sugar and 1 tbsp ground white pepper then combine in a grinder until well blended.

Ingredients:
-2 tablespoons arrowroot or cornstarch
-1 1/4 cups low-sodium vegetable broth (preferably) or water
-2 teaspoons dark sesame oil, optional
-2 tablespoons reduced-sodium natural soy sauce or tamari
-2 tablespoons dry wine, optional
-2 teaspoons grated fresh or jarred ginger, more or less to taste
-1 1/2 tablespoons safflower or other high-heat oil
-2 cloves garlic, minced
-2 large broccoli crowns, cut into bite-sized florets,
-1 carrot, peeled and sliced diagonally
-1 cup small brown mushrooms, stemmed and cut in half
-Several nappa cabbage or regular green cabbage leaves
-1 cup snow peas, trimmed
-1 to 2 celery stalks, thinly sliced on the diagonal
-2 scallions, cut into 1-inch pieces
-15-ounce can baby corn, drained, optional
-Toasted cashews or peanuts for topping, optional
Directions:
1. Dissolve the arrowroot or cornstarch with about 1/4 cup of the broth or water to make it smooth and pourable.Combine the dissolved cornstarch with the remaining broth and the rest of the ingredients in a mixing bowl and whisk together. Set aside.
2. Prepare all the veggies as directed in the ingredient list, as the stir-fry goes very quickly from there. Heat the oil in a stir-fry pan. Add the garlic and sauté over low heat for a minute or so.
3. Add all the vegetables, and turn up the heat. Stir-fry until everything is bright and tender-crisp, not more than 5 minutes, adding very small amounts of additional broth or water, just enough to keep the pan moist.
4. Whisk the sauce together and pour it in. When the liquid thickens and everything is nicely heated through, season to taste with additional soy sauce and serve at once as suggested in the headnote.

-1-2 lbs of gai lan

Ingredients:
-4 medium Chinese eggplants
-2 teaspoons minced garlic
-4 green onion (spring onion, scallion) white and green parts, finely chopped
-2 fresh small chili pepper
-1 tablespoon brown sugar
-2 tablespoons kikkoman soy sauce
-1/2 teaspoon Chinese sesame oil
-salt for taste
-1/2 teaspoon cornstarch and 2 tablespoons water mixture ( optional)
Directions:
1. Cut the ends off the eggplant. Roll the eggplant slices from left to right and cut diagonally into pieces approximately 1-inch thick. Put the eggplant in salt cold water for 2 minutes ,then drain the eggplant on paper towels. Be sure the eggplant is drained thoroughly.
2. Heat the wok and add 2 tablespoon olive oil on medium-high heat. When the oil is hot, add the garlic,and chili pepper ,Stir-fry for 30 seconds. Add the eggplant into the pan. Stir for a 2-3 minutes to mix garlic together. Then add 1 tablespoon brown sugar, 2 tablespoons kikkoman soy sauce,turn down the heat to low-medium ,stir fry for about 10 minutes until the eggplant is tender.
3. Finish off the dish by removing it from the heat and stirring in 1/4 teaspoon white vinegar and 1/2 teaspoon of Asian sesame oil and chopped scallion. Feel free to enhance the presentation by garnishing the dish with a handful chopped chives, cilantro or parsley, or toasted sesame seeds.

Ingredients:
-1 block silken tofu (19 oz box)
-1/4 lb ground pork
-3 tablespoons Sichuan spicy bean paste (辣豆瓣酱)
-2 tablespoons chili powder
-2 tablespoons cooking oil
-3 tablespoons chili oil
-1 tablespoon Sichuan peppercorns (roasted and ground to powder)
-1 tablespoon light soy sauce
-1 teaspoon fermented black beans (rinsed and pounded)
-2 stalks of leeks or scallions (chopped into 1 or 2-inch length)
-2 gloves garlic (chopped)
-1/2 cup water
-Salt to taste
Directions:
1. Cut the tofu into small pieces, drain the water from the tofu and set aside. Heat up a wok and pour in the cooking oil and chili oil. Add the chopped garlic, ground pork, spicy bean paste and stir-fry until the pork is half-done.
2. Then add in chili powder, soy sauce, fermented black beans and stir-fry until aromatic. Add in the tofu and water; stir gently to blend the tofu (don’t break them) well with the sauce. Lower the heat and simmer for about 3-5 mins or until the sauce thickens.
3.Add in the roasted Sichuan peppercorn powder and chopped scallions. Gently stir and blend well. Dish out and serve hot.

Spicy Szechuan Green Beans Recipe

Ingredients
- 1 lb french green beans, ends trimmed
- 5 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp cider vinegar
- 1 tbsp red wine
- 2 tbsp sugar
- 2 tbsp olive oil
- 1 small onion, minced
- 3 garlic cloves, minced
- 3 tsp fresh ginger, minced
- 5 tbsp scallions, minced
- 2 tsp red pepper flakes
Directions
- Steam green beans for 5-minutes. Rinse with cold water and drain. Combine soy sauce, sesame oil, vinegar, wine, and sugar in a small bowl.
- Heat oil in large skillet and stir-fry beans for 1 minute. Set beans aside on a platter.
- Reheat oil and add onion, garlic, ginger, scallions, and red pepper flakes and stir-fry for 30 seconds.Return beans to skillet and fry for an additional minute.
- Add sauce and coat beans well. Serve immediately.
Bok Choy with Oyster Sauce Recipe
Bok Choy with Oyster Sauce Recipe

Ingredients:
-1 bunch Bok Choy or Chinese Cabbage
-1 tsp garlic oil
-2 TBSP Oyster Sauce
-2 tsp sugar
-White pepper
-toasted garlic for garnish
Procedure:
1. Blanch the Bok choy and set aside. In a pan, heat the garlic oil then add the oyster sauce and sugar until well blended. Season with pepper and simmer for 1 minute. Turn off the heat.
2. Arrange the Bok Choy in a platter and pour the sauce over the veggies. Top with toasted garlic.
(To make garlic oil, heat ¼ cup of oil and toast about 1 TBSP of chopped garlic until it is golden brown. Turn off the heat. Separate the garlic and oil using the strainer. You may put the garlic in a paper towel to remove excess oil and store it in an airtight container for future use.)

Ingredients:
-1 tbsp vegetable oil
-1 tsp grated ginger
-4 cloves of garlic, minced
-1 lb of Chinese pea shoots
-1/4 cup of water
-1 tbsp soy sauce
-3 tbsp oyster sauce
-pinch of sugar
Directions:
1.Begin by soaking your peas shoots in cold water, picking over any of the bad leaves, or stems. Next, heat a wok, or a large skillet on medium to high heat. Add the oil, toss in the garlic and ginger, and cook just until fragrant.
2.Remove the greens from the water and toss them into the wok. Add in the water, and give them a gentle toss. Continue to toss gently, watching the greens melt down into a delicious pile of goodness.
3.Now is the time to toss in the soy sauce, oyster sauce, and the sugar. Mix well, making sure you incorporate all of the sauces. Plate, and serve with steamed rice.

Ingredients:
- 1 pound stir fry steak (usually sirloin steak cut into strips)
- 3 tablespoons soy sauce
- 4 tablespoons cornstarch
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup brown sugar
- 1 tablespoon rice vinegar
- 1 1/2 teaspoons sesame oil
- 3 cloves of garlic, pressed
- 2 teaspoons freshly grated ginger
- 1/2 teaspoon red pepper flakes
- 6 tablespoons cooking oil
Directions:
1. Add one tablespoon of soy sauce and steak to a large bowl. Add cornstarch and toss to coat the steak. Spread beef onto a baking sheet and stick in the freezer for 40 minutes, turning over once halfway through.
2. Combine lemon juice, 2 tablespoons of remaining soy sauce,brown sugar, rice vinegar, sesame oil, garlic, ginger and red pepper flakes in a jar. Close tightly with a lid and shake to combine.
3. Once steak is chilled, heat up two tablespoons of oil in a large pot. When the oil is hot, add a third of the steak to the pot and stir fry until cooked. Drain cooked beef on paper towels and repeat the process with remaining oil and beef until you have finished all three batches.
4. Add the dressing mixture to the pot and bring to a boil. Simmer for a few minutes, then add the cooked beef to the dressing and stir to coat.

Ingredients
-1 pound green beans, ends snapped off and strings removed
-3/4 pound flank steak, trimmed
-2 tablespoons dark soy sauce or soy sauce
-1 tablespoon cornstarch
-1 tablespoon Chinese rice wine or dry sherry
-1 teaspoon sugar
-2 teaspoons coarsely ground black pepper
-3 tablespoons canola oil
-1/4cup water
-2 slices unpeeled fresh ginger
-1 medium onion, sliced
Directions:
1. Snap green beans into halves or thirds to make pieces about 2 1/2 inches long. Slice steak with the grain into 2-inch-wide strips. Then slice the strips across the grain into 1/8-inch-thick slices.
2. Whisk together soy sauce, cornstarch, wine, sugar and black pepper in a medium bowl. Add beef and mix well. Heat 1 tablespoon oil in a wok or stir-fry pan over high heat until oil is hot but not smoking. Test by dipping a spatula in the beef mixture and then into the oil; it should sizzle. Add green beans and stir about 1 minute. Add water and reduce heat to medium.
3.Cover and cook until tender-crisp, 7-10 minutes. Transfer beans and liquid to a shallow dish. Add remaining oil to pan and increase heat to high. Add ginger and stir until oil is hot and ginger sizzles. Add onion and stir constantly 1 minute. Stir beef mixture and add to pan. Cook, stirring, until beef is no longer pink, about 2 minutes.
4. Return beans and liquid to pan and stir until mixed well and heated thoroughly, about 30 seconds. Discard ginger.

Ingredients:
-1 1/2 lb. lean round steak, cut into strips
-1 tbsp. Worcestershire sauce
-2 tbsp. reduced-sodium soy sauce
-1 medium onion, thinly sliced
-2 sweet bell peppers, thinly sliced
-1 cup beef broth, canned or homemade
-2 tbsp. cornstarch
-6 Roma tomatoes, cut into wedges
-6 cups cooked long-grain rice
Directions:
1.Preheat large skillet on medium heat. Add steak. Stir and cook until meat is browned.
2.Add Worcestershire sauce and soy sauce. Cover and reduce heat and to low. Cook 15 minutes. Add onion and peppers. Stir, cover and cook 5 to 7 minutes or until vegetables are tender/crisp.
3. Increase heat to medium-high. In a small bowl, mix beef broth and cornstarch. Add to skillet and heat mixture to boiling. Stir in tomato wedges; remove from heat. Cover and let stand for 1 minute or until tomatoes are heated through. Serve over hot cooked rice.

Ingredients
-1-1/2 pound Flank Steak, Trimmed Of Fat And Sliced Very Thin Against The Grain
-1/2 cup Low Sodium Soy Sauce
-3 Tablespoons Sherry Or Cooking Sherry
-2 Tablespoons Brown Sugar
-2 Tablespoons Cornstarch
-1 Tablespoon Minced Fresh Ginger
-8 ounces, weight Fresh Snow Peas, Ends Trimmed
-5 whole Scallions, Cut Into Haf-inch Pieces On The Diagonal
-Salt As Needed (use Sparingly)
-3 Tablespoons Peanut Or Olive Oil
-Crushed Red Pepper, For Sprinkling
-Jasmine Or Long Grain Rice, Cooked According To Package
Directions:
1. Mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss with hands. Reserve the other half of the liquid. Set aside.
2. Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.)
3. Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate.
4. Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the snow peas. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.
5. Serve immediately over rice. Sprinkle crushed red pepper over the top to give it some spice.

Ingredients:
-1.5 pounds beef flank steak, cut into stir fry sized strips
-2 Tablespoons olive oil
-0.5 teaspoons minced ginger
-2 cloves garlic, minced
-0.75 cup soy sauce
-0.75 cup water
-0.75 cup brown sugar
-0.25 cup cornstarch
-0.5 cup shredded carrots
-3 medium green onions, chopped
Directions:
Coat flank steak pieces in cornstarch. Add remainder of ingredients to crockpot and stir well to combine. Place flank steak into the crockpot and cook on high for 2-3 hours or on low for 4-5 hours. Serve over rice or noodles, if desired.
