Tanuki Udon Recipe

Ingredients
-4 packs of Udon noodles-1/4 Aburaage
-1/2 green onion (chopped)
-1/2 oz ground ginger
-10 cups dashi soup
-1 tbsp sake
-4 tbsp mirin
-1/3 cup soy sauce
-1 tbsp salt
-5 tbsp sugar
-4 tbsp katakuriko (mixed with 10 tbsp water)
Directions
- Boil udon noodles
- Boil dashi soup and add sake, mirin, sugar, salt, soy sauce, aburaage and ginger
- Add katakuriko to thicken the soup
- add udon noodles and sprinkle green onions
