Seafood Green Onion Pancakes Recipe




Seafood Green Onion Pancakes Recipe

Serves 4
Ingredients
    1 cup Korean Pancake Mix
    1 cup + 2-3 tablespoon rice flour 1 cup ice water
    3 bunches green onion, cut to fit in the skillet
    2 handful of mixed seafood (shrimp, squid, mussel, etc) cut into bite size pieces
    3 eggs slightly beaten
    grape seed oil for fyring

Dipping sauce
    3 tablespoon soy sauce
    1½ tablespoon vinegar
    1-2 teaspoon Korean chili flakes
    1 teaspoon toasted sesame seeds
    1 tablespoon finely chopped green onion

Directions
1.  Combine flours and add cold water to mix. Mix just until the batter is moistened. Adjust the amount of water for the batter to mimic the consistency of western pancake batter. Place a skillet over medium-low heat, add 1 tablespoon of oil, place the green onions to fit entire skillet and fill the sides with shorter pieces of green onion.

2. Pour the batter to just barely cover. Shake the pan a little so the batter can sip though the bottom to stabilize the green onion. Scatter the seafood pieces, and drizzle ⅓ of the slightly beaten eggs. Fry the pancakes for 4 minutes on each side adding a little more oil, Flip to the other side and continue to cook for another 4 minutes, adding more oil if necessary.

3. Transfer the pancakes onto a cutting board and cut into big bite size pieces. Serve the pancakes immediately with the dipping sauce. For the dipping sauce, combine all the ingredients and mix well.

Calamares Recipe


Calamares Recipe
Serves 2

Ingredients
1/2 lb medium to large sized squid, cleaned and sliced into rings
3/4 cup all-purpose flour
1 piece raw egg, beaten
3/4 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups cooking oil

Directions
1.  Combine squid, salt, and ground black pepper then mix well. Let stand for 10 minutes. Heat a cooking pot the pour-in cooking oil. Dredge the squid in flour then dip in beaten egg and roll over breadcrumbs.

2. When the oil is hot enough, deep-fry the squid until the color of the coating turns brown. Note: This should only take about 2 to 3 minutes in medium heat. Do not overcook the squid.

3. Remove the fried squid from the cooking pot and transfer in a plate lined with paper towels. Serve with sinamak or Asian dipping sauce.

Paella Recipe




Paella Recipe
Serves 4

Ingredients
2 Cups rice
1 Cup shrimp
3 pcs Blue crabs, cleaned
1/2 kilo Manila clams
2 Fish fillet
1/2 kilo mussels
1 medium Onion, sliced
2 Cloves garlic
1/2 Red pepper
1 Can green beans
1 tsp saffron flower
1 tsp annatto powder
1 tbsp tomato paste
1/2 Cup canned tomato
1/2 Cup stocks from shrimp heads
2 Cups water
Canola Cooking oil
Salt and pepper to taste

Directions
1.  Heat the oil in a  large frying pan over moderate heat, saute the garlic, and onion. Stir in the annatto and mix well, then drop-in canned tomato and cook  for a few minutes. Add tomato paste and shrimp stock and bring to a boil.

2. Stir in clams, crabs, mussels, shrimp and fish, season with salt and pepper. Cover and let cook for 5 to 7 more minutes or until seafoods are done. When seafood is just cooked through, remove seafoods and leave the sauce on the pan.

3. Add water, rice and saffron to the sauce. Stir, cover and cook until rice is tender, add more stock if needed. Stir in canned green peas and red or green pepper and cook for another 3 to 5 minutes. Put the seafood back to the pan or served it on top of the rice.
4. Spoon the paella into a serving dish or platter and garnish with the olives and hard-boiled egg, if desired.

Seafood Kare Kare Recipe




Seafood Kare Kare Recipe
Serves 4

Ingredients
200 grams mussels
4 pcs crab, cut into 2
200 grams clams
200 grams squid, cut into rings
250 grams shrimps,trimmed
250 grams fish fillet (cream dory), cut into serving size
2 bundle of string beans, cut into 2-inch long
2 pcs eggplant, sliced diagonally
1 bundle of pechay, trimmed
1 banana heart (puso ng saging), sliced diagonally
2 cloves garlic
1 onion, chopped
3/4 cup peanut butter
5 cups seafood broth
2 tsp annatto seeds (atsuete)
salt, to taste
2 tbsp cooking oil
2 tbsp cornstarch, dissolved in 1/2 cup of water
salt and pepper to taste
5 tbsp bagoong guisado (as condiment)

Directions
1. Steam fish fillet, crab, prawns, clam and mussels until cooked. Slice the fish fillet in to serving sized and cut the crab in halves then set aside. Set aside the liquid used to steam the seafood.

2. Heat up the oil, then put in the atsuete(annatto) seeds until the oil becomes deep red. Remove the seeds from the oil by straining them. Sauté garlic and onions in oil until onions become translucent.

3. Add the broth from which you steamed the seafood with. Stir in the peanut butter, salt and pepper. Add the vegetables and simmer, don’t overcook the veggies only half-done. Add clam, mussels and prawns and simmer for another 6 minutes.

4. Add pechay, crab and fish fillet slices and simmer for another 3 minutes. Serve with  bagoong alamang guisado or shrimp paste.
