Korean Style Fried Snapper Recipe




Korean Style Fried Snapper Recipe

Serves 4
Ingredients
   1½ pound black snapper (or red snapper), cleaned and salted
    1/3 cup cooking oil
    2 tablespoons flour
    2 teaspoons salt
Seasoning sauce (Yangnyeomjang):
    ¼ cup soy sauce
    3 green onions, chopped
    2 garlic cloves, minced
    1 green chili pepper, chopped
    1 tablespoon hot pepper flakes
    2 teaspoons sugar
    1 tablespoon roasted sesame oil
    1 tablespoon roasted sesame seeds

Directions
1. Take the fish from the fridge and pat dry with a kitchen towel. Sprinkle the flour on both sides of the fish. Heat up a nonstick pan and add the cooking oil. Cook the fish until the bottom turns golden brown. It’ll take about 20 minutes over medium heat. Turn it over with a spatula and cook the other side for another 15-20 minutes until that side turns golden brown, too.
2. Combine the seasoning sauce ingredients in a bowl. Transfer the fish to a plate and place the seasoning sauce over top of the fish. Serve with rice, kimchi, a soup or stew, and more side dishes if desired.

Fish Cakes Recipe

Serves 4
Ingredients
    ½ pound fresh white fresh fish fillet (cod, pollock, flounder, or snapper)
    ¼ pound (4 ounces) squid: cleaned, rinsed, and chopped
    ¼ pound (4 ounces) shrimp: shelled, deveined, rinsed, and drained
    2 garlic cloves
    ½ medium onion (about ¼ cup)
    1 teaspoon salt
    1 teaspoon sugar
    ¼ teaspoon ground white pepper
    3 cups plus 1 tablespoon vegetable oil
    ¼ cup all purpose flour
    ¼ cup potato starch (or sweet potato starch)
    1 large egg white

Directions
1. Inspect the fish fillet and remove any remaining fish bones. Cut the fish fillets into chunks and put them into a food processor. Add the squid, shrimp, garlic, onion, salt, sugar, ground white pepper, 1 tablespoon vegetable oil, flour, starch, and egg white. Blend for a couple of minutes until the mixture turns into a smooth paste.
2. Transfer to a bowl. Heat 3 cups vegetable oil in a skillet over medium high heat for about 5 minutes. Lower the heat to medium (about 330-350° F or 180° C) Brush some cooking oil on a large and wide  rectangular spatula. Spread about ¼ to ⅓ cup of the fish paste to the spatula with a knife. Use your knife to carefully roll the paste into a cylinder, and gently slide it into the hot oil.(If this method is too tricky, simply use a spoon to scoop up some of the paste, and then another one to push it off the first and into the hot oil.)
3. Repeat shaping and pushing the fish mixture to hot oil,  3 to 4 sticks in the skillet, and be sure not to to crowd them. Stir the fish cakes occasionally to fry all sides evenly. Let them cook about 5 to 7 minutes over medium heat until golden brown. Take the fish cakes out and put them in a strainer over small bowl. Pat the fish cakes with paper towel to remove the excess oil.
4. Serve hot as a snack right away. For later use, cool it down and put it into a plastic bag. Keep the bag into a fridge up to 1 week or freezer up to 3 months.

Honey Lemon Fish Fillet Recipe


Honey Lemon Fish Fillet Recipe
Ingredients:
  • 300g frozen cod or other fish fillet (2/3 lb)
(A)
  • 1/3 teaspoon salt
  • dash of sesame oil and pepper
  • 1 egg
  • 1 Tablespoon cornstarch
(B)
  • 3 Tablespoon lemon juice
  • 1/3 Tablespoon tomato ketchup
  • 3 Tablespoon honey
  • 1 teaspoon soy sauce
  • 1/2 cup water
Directions:
  1. Thaw fillet, wash, wipe dry. Cut into pieces, marinate with (A).
  2. Coat fillet pieces with a layer of corn starch, deep-fry to a golden brown, scoop up and drain.
  3. Heat and stir (B) in wok to a boil. Stir until sauce is evenly coated on fillet pieces. Done.

Steamed Fish with Black Beans Recipe


Steamed Fish with Black Beans Recipe
Serves 4
Ingredients:
-1 ½ lb whole sea bass, cleaned
-½ teaspoon salt
-pepper
-2 tablespoons cornstarch
-1 tablespoon salted black beans, soaked for 10 minutes, drained and minced
-2 garlic cloves, minced
-1 teaspoon minced ginger root
-1 scallion, finely chopped
-2 tablespoons oil
-1 tablespoon soy sauce
-2 tablespoons dry sherry
-Shredded scallions to garnish

Directions:
1. Rub the fish, inside and out, with salt and pepper, then coat with the cornstarch.
2. Place the fish on a heatproof plate. Mix the black beans with the garlic, ginger, and scallion. Spoon over the fish and sprinkle with oil, soy sauce and sherry. Place in a steamer and steam for 20 to 25 minutes.
3. Transfer the fish to a serving plate. Spoon the sauce over and garnish with the scallions. Serve hot.

Five Spice Cod Fish Recipe
Ingredients:
  • 2/3 lb (300 g) codfish
  • 2 Tablespoons cornstarch
(A):
  • 1/4 teaspoon salt
  • 1 teaspoon cooking wine
(B):
  • 2 Tablespoons minced scallions
  • 2 Tablespoons minced garlic
  • 1/2 Tablespoon minced ginger
  • 1/2 Tablespoon sliced red hot chili pepper :)
  • 1 1/2 Tablespoon soy sauce
  • 1 1/2 Tablespoon black vinegar
  • 1 Tablespoon cold water
Directions:
  1. Cut the fish into 1.5 cm thick slices; marinate in (A) for about 10 minutes. Then coat with cornstarch, set aside.
  2. Heat 2 Tablespoons oil, pan-fry the fish until golden on both sides. Pour in mixture (B) into the pan until heated. Serve quickly.

Fish Maw Soup Recipe


Fish Maw Soup Recipe
Serves 6

Ingredients
•    6 cups chicken stock
•    1/4 lb fish's maw, soaked and diced
•    6 water chestnuts, diced
•    1 egg stirred
•    2 tablespoon cornstarch (mix with 2 tablespoon of cold water)


Directions:
1.    In a pot, boil the chicken stock then add fish maw and water chestnuts.
       Simmer for 30 minutes.
2.    Add egg and stir then add cornstarch and stir thoroughly.
3.    Simmer for another 5 minutes, add soysauce to taste if preffered
