Shoyu Ramen Recipe


Shoyu Ramen Recipe
4 servings
25 minutes
Ingredients
-4 packs of ramen noodles
-1 clove garlic, finely chopped
-2 tsp finely chopped fresh ginger
-4 tsp sesame oil
-4 cup chicken soup stock
-2 cup kombu dashi soup stock
-2 Tbsp sake
-2 tsp salt
-3 tsp sugar
-6 tbsp soy sauce
-chopped negi
-nori (dried seaweed)
-1 tsp pepper

Directions
1. Heat sesame oil in a pan and saute ginger and garlic
2. Cook the noodles and follow package directions
3. In a seperate pot, add chicken soup stock and kombu dashi soup stock in the pan and bring to a boil
4. Add sugar, salt, sake, and soy sauce in the soup then run the soup through a strainer.
5. Serve hot soup into 4 bowls and add noodles
6. Place toppings, such as chopped negi and nori seaweed. Sprinkle some pepper if you would like.

Shio Ramen Recipe



Shio Ramen Recipe
4 servings
25 minutes
Ingredients
- 4 packs of ramen noodles
-1 cup whole kernel corn
-1 cup bean sprout
-2 tbsp butter
-6 tsp salt
-4 cup chicken soup stock
-2 cup katsuo dashi soup
-4 tsp mirin
-3 tsp white sesame seeds

Directions
1. Melt butter in a medium pan and saute corn and bean sprouts
2. Season with salt and pepper then pour chicken soup and katsuodashi soup and bring to a boil.
3. Season with salt and mirin. Serve the hot soup into individual bowls.
4. In a new pot, cook the ramen noodles (see package instructions)
5. Drain the noodles and serve in the hot soup. Sprinkle sesame seeds on top.

Miso Ramen Recipe


Miso Ramen Recipe
4 servings
20 minutes

Ingredients:
-4 eggs
-4 packs of ramen noodles
-1/2 cup bamboo shoots, sliced
-1/2 cup corn kernels, drained
-1/3 cup spinach
-12 cups store-bought or homemade pork or vegetable broth
-4 teaspoons instant dashi granules
-3 tablespoon soy sauce
-6 tablespoons fresh miso paste
-1 cup fresh bean sprouts
-1 stalk green onion finely chopped

Directions:
1. Place the whole, un-cracked eggs in a medium pot and fill with water to cover eggs
2. let the eggs sit in the hot water for 10 minutes then use a spoon to remove the eggs and peel then slice each eggs in half.
3. Boil water and add the ramen noodles and cook according to package instructions then drain and rinse with cold water
4. Divide the noodles, hardboiled eggs, bamboo shoots, corn and spinach among 4 large serving bowls.
5. In a large pot, add the stock, instant dashi and soy sauce. Bring to a boil over high heat.
6. Add in the miso then pour some soup into each bowl.
7. Season each bowl with fresh bean sprouts and green onions
