Korean Rice Balls Recipe

 













Korean Rice Balls Recipe
Serves 4
Ingredients
    2-3 large Shitaki mushrooms chopped, about 1 cup
    ½ carrot finely chopped, about ¼ cup
    1 teaspoon garlic finely chopped
    1 teaspoon ginger finely chopped
    1 teaspoon chicken stock
    salt, pepper, sesame seeds, sesame oil(1/2 teaspoon) to season
    1 teaspoon olive oil
    2 cups cooked rice, heated

Directions
Saute carrots, garlic and ginger in oil over medium heat until soft, adding chicken stock to soften the carrot. Add mushroom and continue to saute until they are soft. Season with salt, pepper, sesame seeds, and sesame oil.  Mix with rice in a bowl and shape them into balls about the size of golf ball. Serve in room temperature.

Bagoong Rice Recipe




Bagoong Rice Recipe
Serves 2

Ingredients
2 tablespoons oil
1 tablespoon garlic, minced
1/4 cup pork meat, sliced into bite-size pieces
2 tablespoons dried shrimp fry (alamang)
3 tablespoons shrimp paste (bagoong)
2 tablespoons water
3 cups day old rice
1 cheek green mango, sliced into thin strips
half a cucumber, sliced into thin strips
1 scrambled egg, sliced

Directions
1. Heat oil in a pan and sauté garlic until fragrant. Add the pork and cook until no longer pink. Add alamang and cook until crispy. In a bowl, mix bagoong with water then pour into a pan. Mix until mixture boils, then add rice. Toss well, making sure each grain is coated with the bagoong mixture.
2. Transfer rice to a bowl then top with sliced green mangoes, sliced cucumber, and sliced scrambled eggs. on the steamer rack and cover, wait for another 20 more minutes to let the dough rise even more.

Garlic Rice Recipe




Garlic Rice Recipe
Serves 2

Ingredients
3 garlic cloves, crushed
2 tablespoons vegetable oil
2 cups long-grain rice
4 cups water
2 teaspoons salt
Directions
1.  Saute garlic cloves in hot oil in a large saucepan over medium-high heat 2-3. Add rice, and saute 1 minute.
2. Stir in 4 cups water and salt; bring to a boil. Cover, reduce heat to low, and simmer 30 minutes. Do not uncover rice until time is up.
3. Remove from heat; let stand 5 minutes. Fluff with fork.

Java Rice Recipe


Java Rice Recipe
Serves 4

Ingredients
4 cups cold cooked rice, hand mashed to separate grains
2 tbsp annatto seeds
2 shallots, finely chopped
6 cloves garlic, minced
oil
freshly ground black pepper
salt

Directions
1. Heat oil in a wok then add the annatto seeds, stir fry in medium heat until oil turns reddish orange in colour, roughly around 1 minute in medium heat.
2. Remove and discard the annatto seeds leaving the oil on the wok.
3. Add garlic and stir fry until lightly browned. Add the shallots and sauté until soft.
4. Add rice then stir well, evenly distribute the oil while stir frying. Turn heat to high then cook for 5-7 minutes while occasionally stirring.

How to make sushi rice


How to make Sushi Rice Recipe

Serves 4-6 people worth of sushi
Ingredients:

-3 cups uncooked sushi or sticky rice
-3 cups water
-½ cup rice vinegar
-½ cup sugar
-1 teaspoon salt

Directions:

  1. Wash the rice and rinse thoroughly with water.
  2. Then put in rice cooker to cook
  3. In a sauce pan mix together rice vinegar, sugar and salt over medium heat until sugar has dissolved. Allow to cool.
  4. Put the cooked rice into a large mixing bowl; pour the vinegar sauce over the hot rice and mix. Allow to cool slightly before using in sushi recipes.
