Cashew Pork Recipe
Serves 4
Ingredients:
-2 lb. boneless pork, cut into 1/2 inch strips
-3 tablespoon soy sauce
-2 tablespoon rice wine or dry sherry
-2 teaspoon salt
-Pinch of sugar
-4 tablespoon peanut oil
-1/2 teaspoon crushed garlic
-3 scallions, including tops, thinly sliced
-1/2 cup drained sliced bamboo shoots
-1/2 cup sliced drained water chestnuts
-1 cup fresh bean sprouts
-2 tablespoon cornstarch mixed with 2 tablespoon cold water
-1/3 cup unsalted raw cashews
Directions:
1.Mix together soy sauce, sherry, salt, and sugar; set aside.
Heat oil in uncovered wok or fry pan to 350 degrees Fahrenheit.
2.Add
garlic and onions, stir fry 1 minute. Add pork, stirring 1 minute. Add
bamboo shoots, water chestnuts and bean sprouts, reduce heat to low;
cover and cook 3-4 minutes.
3.Stir cornstarch mixture and add to wok; stir fry until sauce thickens.
Add cashews and mix.
